Build Your Own - Taco Salad - Eleanor Brown Style

1 lb. ground beef
1 chopped onion
1 or 2 cloves garlic
1 - 8 oz. can of tomato sauce
2 1/2 (tomato sauce) cans of water
1 - 6 oz. can of tomato paste
1-3 tsp. chili powder
1 tsp. oregano
1 tsp. cumin
2 tsp. sugar
1 1/2 tsp. salt
pepper, to taste
2/3 c. cooked rice
1 pkg. Fritos corn chips

Saute gr. beef, onion and garlic.  Mix in remaining ingredients except rice and corn chips.  Simmer 30 minutes, stirring occasionally.  Add rice, cover, remove from heat.  Top with: lettuce, tomatoes, green onion, avocado, cheese, olives.  ( Also good with sour cream, and cilantro dressing)

Easy Cheesy Shell Casserole (originally known as El Greco for some unknown reason)

Ingredients
1 lb. hamburger
1 large onion, chopped
2 cloves garlic, minced
salt and pepper to taste

16 oz. small sea shell pasta

1 small (4.0 oz dry weight) can mushrooms (opt)
1 - 10 3/4 oz. can tomato soup
1 - 15 oz. can creamed corn
12 oz. tomato paste or 16 oz. tomato sauce
1 - 10 3/4 oz. can cheddar cheese soup

8 oz. grated cheddar cheese, to top the casserole

Brown the hamburger and then add in the onions and saute until translucent.  Then add in the garlic and saute for a minute or two.  Season the meat with salt and pepper to taste.  While hamburger is cooking boil the pasta in salted water according to directions on the pkg. and then drain.  In a large bowl mix the seasoned hamburger, the sea shell pasta, the can of mushrooms, tomato soup, creamed corn, tomato paste or sauce and cheese soup.  Spread the mixture into a 9X13 glass casserole dish and bake for about 30 minutes in a 350 degree oven or until warm.  During the last 10 minutes or so of baking, spread the grated cheese over the top of the casserole so it can melt.
